Did you Get a Caja for Christmas?

Let’s face it...if Santa brought you a La Caja China (aka, a Cajun Microwave) for Christmas this year, you must have been pretty high on his “Nice” list...or, at least, you paid off the right elf!

Now that you’re the proud owner of a magic

box, let’s take a look at what I consider to be the five essential add-ons to get ready for your first big roast!

There a lots of great accessories and gadgets you can add to your Caja Toolbox, but these are the ones I can’t live (or at least roast) without...

Heavy Duty Vinyl Cover

Protect your Pig Roaster from the Elements!

This heavy duty vinyl cover provides the protection your new roasting box needs to stay in the best condition. This is the number one accessory for your pig roaster!

Heavy gauge, aluminum, ribbed construction for extra strength. Riveted, oversized handle for easier lifting of heavy loads.

Remember the first rule of roasting in the magic box: Do not peek! Once cooking has started I try not to lift the lid for any reason, except per the instructions. I even bought a huge metal ash scoop – it’s available on my Amazon store, or your local Home Depot - to keep from ever lifting the lid except to flip the pig.

Lifting the lid even once or twice can really screw up your planned cook time, by drastically lowering the internal temp of the box.

Remote Meat Thermometer

Experienced chefs know…you don’t cook to time, you cook to temperature.

The reason is, there are too many factors, different each time you cook, that can effect the amount of time necessary.

However, if you know exactly what internal temperature you want your finished food to reach, perfect cooking requires nothing more than patience!

Trust this thermometer with any of your meals cooked upon your Caja China roasting barbecue!. Set alarm to go off when it reaches set temperature, or set it to go off when set amount of time has elapsed.

Pre-settable alarm temperature range from 32 to 392 degrees F; loud 5-minute alarm.

Equipped with a longer probe wire measuring 43 inches; requires one AAA battery for power, which is included.

A-Maze- n Wood Pellet Smoker

I am, first and foremost, a BBQ guy, and, while I love me some perfectly roast pig, BBQ...real BBQ, requires smoke.

I’ve used pretty much every method you can imagine, and a few you probably can’t, to add smoke to my La Caja China, and this is, hands down, my favorite.

A-Maze- n Smokers are light weight, durable and portable smoke generators, that produce great quality smoke for cold and hot smoking. They are versatile enough to be used in just about any smoker or a grill.

One of the factors of Caja cooking, which is often overlooked, is that, when your pig (or whatever) is done cooking, there’s a lot of ashes…very hot ashes, left of the grill.

This isn’t a big deal at home, but if you’re somewhere else, the park, the beach, etc., you may not have a convenient (or safe) place to dispose of hot ashes, and you may not have the time to wait hours for them to cool.

I keep a small, metal trash can, with a locking lid, with my roasting gear, so I always have a quick, and safe, method of storing hot ashes, if I need to bug out early.

The best method of shredding or pulling a freshly roasted pig is with your hands. The best time to do so, is while it’s still hot.
